Our Honey

Find out how we produce our honey, with a focus on keeping our products as raw and as minimally processed as possible.

Incredibly, our 227g jars of honey represent: 
The entire working lives of around 450 bees. 
Over 25,000 miles of flight. 
Visits to over 1,000,000 flowers.

Wildflower Honey

Our Wildflower Honey is as pure as it gets, retaining the precious components of raw, natural honey. 

  • The honey is extracted by hand from the honey frames with an extractor, using centrifugal force to spin the honey out of the cells. 
  • It flows through a fine-medium filter (350 micron), which strains out the larger pieces of wax but allows the pollen to remain. 
  • It is left to settle for 24 hours. 
  • It is then decanted into jars.

Soft Set Honey

Our Soft Set Honey is also a raw product, with just a couple more steps in the processing to achieve a gorgeously thick texture.

  • Soft Set Honey is extracted from the frames in the same way as our Wildflower Honey. 
  • After straining through a fine-medium filter (350 micron), the honey is allowed to settle until it crystallises. 
  • The honey is then brought back up to hive temperature, and the honey is churned a couple of times to break up the crystals.
  • It is then decanted into jars.

Hot Honey

Our Hot Honey is an exciting new addition to our range! Based on our classic Wildflower Honey, we create our Hot Honey using minimal processing. 

  • We craft a tincture of chilli.
  • When this is ready, we add a small amount to each jar of honey, always less than 1%. 
  • That's it! No heating and no additions of vinegars or other products that are often used to bulk out hot honey.

Honeycomb Section

This is as pure and as raw as it gets. Small wooden frames are placed in a rack within the most prolific colonies, and the bees start to work on filling the empty space with fresh wax. As the honeycomb begins to build out, they fill it with nectar and fan it down from around 80% water content to less than 20%. When this is complete, the nectar, now honey, is capped over with a thin layer of wax.

When the rack is full, it is removed and the sections are boxed ready for use.
